Great Way To Get Your Chicken, Pasta, Vegetable & Bacon Fix All In One Easy To Make Meal!
We liked this great tasting dish so well we have made 3 times over the past 10 days and yes the leftovers were just as tasty as the fresh made. Tried it doing using both olive oil and bacon fat and while maybe it’s not so good for you the bacon flavoring was tastier! The other preference was using the fetticini noodles. Seemed to be heartier.
Anyway if you enjoy all these flavors give it a try, we sure did like this and have added it to our meal routine.
12 oz Angel Hair of Fetticini Spaghetti
1 TBS Olive Oil
1 Pound Chicken Breasts – Salt & Pepper
6 Slices Bacon
2 Cloves Garlic
2 Cups Diced Tomatoes (Canned or Fresh)
3 Cups Baby Spinach Fresh
1/2 Cup Heavy Cream
1/3 Cup Parmesan Cheese – Basil For Garnish
Cook Spaghetti Until Dente – Drain & Reserve 1 Cup Pasta Water
Cook Bacon Until Crisp, Drain & Chop Up The Bacon.
Pour Off The Bacon Fat & Reserve
In The Same Drained Bacon Skillet Over Medium Heat Add Seasoned Chicken Breasts And Cook Until Done. (We Went Just A Lightly Browned)
OR- In another Skillet Over Medium Heat Add Olive Oil Add Seasoned Chicken Breasts And Cook Until Done.
Transfer To Cutting Board & Cut Into Strips.
Add Couple Table Spoons Bacon Fat Into a Skillet Large Enough To Hold All The Ingredients
On Medium Heat Layer Garlic, Tomatoes, Salt & Pepper To Taste.
Then Spinach, Heavy Cream, Then Add Parmesan Cheese & Salt & Pepper To Taste
Add , 1/2 Cup Reserve Pasta Water. Simmer
Then Layer Your Earlier Choice of Pasta – Then Chicken & Bacon. Simmer, Mix & Serve!
